Chicken Lollipops

Clean and Fun handle!

Chicken Lollipops are just what they sound like, a ball of chicken on a stick. I love drumsticks and wings but sometimes hate dealing with barbecue sauced fingers. Here is the solution! Chicken Lollipops that have a clean handle to eat the meat off the bone. They are visually impressive for any dinner guest. Chicken Lollipops can be served as an appetizer or as part of a main course. Enjoy!

Ingredients

Prepare the Chicken

The first couple of chicken lollipops take a while, don’t get discouraged. It gets easier once you get the hang of it.

  1. Using Kitchen Shears or a sharp knife cut the chicken to the bone all around the knuckle.
  2. Pull the cartilage off the knuckle.
  3. Hold the bone in one hand and the meat in another; slide the meat carefully away from the knuckle, forming a thick ball at the end of the bone.
  4. Clean the bone of any remaining stringy tendons or fat.
  5. Cover the ball of meat with the chicken skin, taking care to not tear the skin.
  6. Place the chicken lollipops on a plate or tray and cover with barbeque seasoning.
  7. Cut aluminum foil into 6×6 inch squares.
  8. Use the aluminum squares and wrap the exposed chicken bone. This will prevent the bone from burning and leave a clean presentable handle for eating.

Prepare the Grill

  1. Setup the grill for Indirect Grilling on Low Heat

Cook the Chicken

  1. Place the chicken directly on the grill grate. Position so the handles are standing straight up.
  2. Cook approximately 1.5 hours.
  3. Increase temperature of grill to Medium Heat.
  4. Using a brush, apply the Honey Mustard Sauce and Barbecue Sauce to the chicken. Half barbecue and half honey mustard.
  5. Remove from grill when internal temperature reaches 165°F
  6. Remove the aluminum foil.
  7. Place on a plate and serve.

Notes

For helping control the temperateue of my grill and allow me some freedom I love using DigiQ BBQ Temperature Control and Meat Thermometer.

Sometimes I go one step further and use   Wireless Grill and Meat Thermometer. This allows to me freedom to do other things and maintain a watchful eye on the grill and meat temp.
